RAW Portobello Pizza “PortoPizza”

Who doesn’t love Pizza?  No one I know!  But, how do you make a RAW Pizza from a Mushroom?

For my RAW Pizza, I used FRESH, Organic Portobello Mushrooms from my Local Farmer’s Market for the shell of my Pizza.  And just because I’m RAW, I don’t like to use the Conventional Names so for this Plant-Based Food, I’m now calling it “PortoPIZZA”.

It will seem like a lot of work, but it’s all about the Prepping!  There are a few differences … Just like you have to Prep the ‘Toppings’ on a Conventional Pizza, this PortoPizza will be faster to construct. The Tomato Sauce that is stewed for Hours for a regular Pizza, is made in 30 seconds for this RAW Sauce! You will however, have to wait longer for this RAW PortoPizza as it’s Dehydrated, BUT, it’s Worth the Wait!

So how do you know if a Mushroom is FRESH?  Look under its cap to see if the Stem meets the Cap and is firmly attached. With FRESH Mushrooms, the Gills are all in a line and not laying down and the Gills will be covered by skin flaps coming up from under the Cap. As you can see, my Assistant is checking it out in the picture below:

Instructions
  1. Make sure your Portobello Mushrooms are Fresh. Take the stems out carefully as they will be snugly attached when Fresh.

  2. Remove all of the Mushroom Meat including the Stem and Gills (I use a Melon Baller). The shell should be very thin, but be careful not to go to deep as you don't want to tear the Cap. Chop the Mushroom Meat, Gills and Stem and put into a bowl.

  3. In a Bowl, add chopped Mushrooms, 1/2 of the chopped Zucchini and/or Eggplant and some Herbs. Add the Coconut Aminos and stir in. Brush some Coconut Aminos onto the Mushroom Shells back, inside and rims. Set Mixture aside until ready to use.

  4. And now for the Tomato Sauce ... Put all ingredients into the Blender and Blend. Yup - that's it!

  5. If you want a thicker sauce, add another Tomato and/or more Nutritional Yeast. If you want it Sweeter - add another Date (pitted).

  6. Put the Mushroom Shells onto a Dehydrator Tray. You can use without a Sheet if you haven't used a lot of Coconut Aminos. Now for the Toppings .... Add the Zucchini and/or Eggplant Slices ....

  7. Top with Tomato Sauce ....

  8. Add the Mushroom Meat Mixture and Top with Fresh Basil Leaves and Oregano Florets for Decoration.

  9. And Finally .... Add the Cashez Sauce all around the outside to leave the Flower Design exposed. If you wanted to cover the whole top with Cashez, then put the Herbs on last. Note: Here I slipped in a Sheet as my Shells were leaking a bit of liquid.

  10. Dehydrate for 4-5 hours - or until the Cashez is a bit crunchy. Hard to believe this is all RAW and it tastes Magnifico! Appetito!
