RAW Creamy Wild Mushroom Soup 

Love Mushrooms?  You’re going to love this Rich, Creamy, filling Soup.  I make mine from a Dried Wild Mushroom Mix and use Almonds as my Cream. Soak the Almonds and Mushrooms ahead of time, so when you are ready, everything can be made in less than 5 Minutes! When you blend in a High Speed Blender, like a Vitamin for 1-2 minutes, your Food will be Warm and still stay RAW.  Check out the Easy Recipe below.

Ingredients
Preparation
  • 1 Cup Raw European Almonds Soak ahead of time - in a Dish of Filtered Water - 1-12 hours (overnight).
  • 1 Package Dried Wild Forest Mushroom Mix Soak in Filtered Water to Reconstitute 20 minutes then Strain. **Reserve 1-2 whole pieces for Topping.
  • 1 Tablespoon Coconut Aminos Soak 1-2 whole pieces of reconstituted Mushrooms in Aminos.

  1. Soak Almonds in a dish of Filtered Water for 1 hour, or overnight. Strain the Almonds. Add Almonds to Blender with Filtered Water, adding a little bit of water at a time. ***Note - the less water you use, the thicker and creamier the soup. Strain in a Nut/Hemp Bag. Add Mylk back into the Blender. ***Use the pulp for cookies / smoothies / desserts.

  2. Soak the Wild Forest Mix, in Filtered Water to Reconstitute approx 20 minutes. Once Hydrated, take out a few whole Mushrooms, place in a separate dish and add the Coconut Aminos. **Reserve these Mushrooms for the Topping.

  3. Strain the Mushrooms. Get Ingredients Ready for the Vitamix.

  4. Add all of the Ingredients into the Vitamix (except Toppings: Whole Mushrooms and Chives) Blend.

  5. The more Mushrooms you add, the Darker your Creamy Soup. If you want a Lighter Colour, add more Almond Cream. If it's too thin, add Almond Cream. If it's too thick, add Filtered Water. Salt and Pepper to Taste.

  6. Top with the Marinated Whole Mushrooms. Drizzle Oil, Add some Chives, or Shallots. Bamb - Blended in less than 5 minutes. njoy!
